Confit Turkey Thigh Sourdough Sanger

Phil Roberts introduces the ultimate turkey sanger packed full of flavour.

Ingredients

2 KellyBronze confit turkey thighs
1 loaf of sourdough bread, sliced
4 slices of gouda cheese
4 tbsp full fat mayo
1 tsp white miso paste
1 handful fresh rocket
Your choice of shop bought red pesto
BBQ rub or salt & pepper to taste

Method

1. Preheat a grill for smoking, around 125°C. Once it is up to temperature, season the thighs well with your favourite BBQ rub or just salt and pepper (I go heavy on the pepper).

2. Mix the mayo and miso paste in a small bowl and set aside.

3. Insert your Meater probe and use the KellyBronze setting in the UK version of the app. Target temperature recommended at 65°C.

4. Cook the thighs according to the app and follow the instructions – remove from the grill and shred with a little more seasoning then rest.

5. Toast the bread over the fire on one side until you achieve some satisfying grill lines and a nice crispy finish, flip them over and add the cheese slices to two pieces.

6. Place them back on the grill indirectly and close the lid to melt the cheese. Scrape over the mayo on the non-cheesed bread. When the cheesy sourdough is all melty and delicious, drizzle some pesto directly on to the cheese.

7. Load the sandwich with rocket, then the shredded turkey thigh and top with the cheesy flavour bomb slice. Cut into halves and get a shot for the gram – it’s a beauty.
