Lamb Shoulder on Boulangère Potatoes

This is a fabulous Sunday celebration dish that can be popped in a low temperature grill first thing in the morning and be ready for a delicious late lunch.  Lamb shoulder is incredibly forgiving and very hard to overcook, so you can literally stick it in and forget about it. The meat should fall apart with the slightest pressure.

Ingredients

1 onion, thinly sliced
6 large potatoes, thinly sliced
Fresh thyme, woody stalks removed
1 whole lamb shoulder
Extra virgin olive oil
Maldon salt, and black pepper
3-4 cloves of garlic
A few sprigs of rosemary
500ml chicken stock

Method

1. In a bowl, mix together the sliced onions and potatoes with a little olive oil and a generous sprinkling of thyme.

2. Rub oil over the lamb and liberally season with salt and pepper.

3. Evenly layer the potato and onion mix in the bottom of a baking tray then place the lamb on top.

4. Pour the chicken stock over the potatoes.

5. Scatter over the garlic cloves and rosemary.

6. Slide on to the grill set up for indirect cooking at a low temperature for 4-5 hours until the lamb is fall-apart tender and the potatoes are crispy on top and soft inside. If the lamb starts to catch, loosely tent in foil.

7. Allow to rest uncovered for 15 minutes while you prepare accompanying veg.

8. Set the tray on a wooden board in the middle of the table and let everyone help themselves.
