Warm Winter Cheeseboard

Abby Allen shares her recipe for the perfect warm cheeseboard during those cold winter months.
Ingredients
2 Baron Bigod, or similar cheese suitable for baking
4-5 tablespoons honey
2 bunches red or black grapes
4 figs
50g walnuts
A few sprigs of rosemary
A few sprigs of thyme
A selection of bred and crackers to serve
Method
1. Light the campfire and wait until the wood has turned to embers or the charcoal has formed a thick grey coat.
2. Take a large cast iron pan and add the grapes and figs.
3. Place the pan directly over a low-medium heat away from any flames and cook for around 5-6 minutes.
4. Once the fruit has started to just give, remove the pan from the heat and squish in the cheese. Sprinkle over the walnuts and herbs and place back over the fire.
5. Watch as the cheese begins to melt around the edges. Once this has begun, drizzle over your first 2 tablespoons of honey.
6. Allow the cheese to vigorously bubble and the fruit to collapse and combine with the aromatic herbs; this may take around 7-8 minutes.
7. Once the cheese is volcanic, gooey and gorgeous, remove from the heat and decently drizzle with a further 2-3 spoons of honey.
8. Dive in with fresh bread and crackers, scooping up the luscious fruit, cheese and nuts.
9. A little charcuterie also makes a delicious pairing, fondue style. Get creative and enjoy being outside in the wild at this magical time of year.
