Roast Pear & Brown Butter Frangipane Tart with Smoked Salted Caramel

Nutty brown butter frangipane is topped with grill-caramelised pear halves and baked until golden, giving these individual tarts a rich, smoky depth you won’t get from an oven. A generous drizzle of smoked salted caramel and a scattering of lemon thyme finish them off for a dessert that’s indulgent yet beautifully simple.

Ingredients

TARTS

4 pears, peeled, halved, cored
8 pastry cases
100g caster sugar
200g butter
200g ground almonds
2 eggs
200g sugar
Lemon thyme to garnish

SMOKED SALTED CARAMEL

200g sugar
2 tbsp butter
1 tsp salt
100ml cream

Method

1. Set your Kamado Joe for indirect cooking at 180°C using the heat deflectors in place.

2. Place 200g butter in a small cast iron or heavy-based pan and cook over direct heat until it turns golden brown and smells nutty. Remove from the heat and allow to cool slightly. Whisk in the eggs, ground almonds and 200g sugar until smooth and fully combined. Spoon the frangipane mixture into the pastry cases, filling each about three-quarters full.

3. Lightly coat the cut sides of the pear halves in caster sugar. Place them cut side down directly on the grill over medium heat and cook until caramelised with defined grill marks and a deep golden colour. Remove from the grill and place one pear half on top of each tart, pressing gently into the frangipane.

4. Transfer the tarts to the indirect side of the Kamado Joe and bake for 25 minutes or until the frangipane is set and lightly golden on top.

5. While the tarts are baking, make the smoked salted caramel. Place 200g sugar in a small pan over direct heat and allow it to melt, swirling occasionally until it forms a deep amber caramel. Carefully stir in the butter, then the salt. Slowly pour in the cream, stirring continuously, and simmer for around 5–10 minutes until smooth and slightly thickened. Remove from the heat and allow to cool slightly.

6. Serve the warm tarts drizzled generously with smoked salted caramel and finish with a few sprigs of lemon thyme.
