Potato Rösti with Grilled Monkfish Tails and Mushy Peas

The rösti is the star in this recipe show. The crispy potato combined with fish and peas gives posh fish and chip vibes but the rösti would also make a delicious brunch with ham and a fried egg. The type of potato doesn’t matter too much as long as it’s large enough to grate but the ghee or clarified butter should not be substituted – it provides the perfect buttery golden crunch, standard butter burns too easily.

Ingredients

1 extra-large potato – we used a baking potato
Flaked sea salt
Black pepper
50g ghee or clarified butter
100g monkfish tail
1 tin of mushy peas

Method

1. Peel and grate the potato. Using your hands squeeze most of the liquid from the potato strands. It doesn’t need to be completely dry and you will need some moisture for steaming the centre of the rösti as it cooks. Place in a bowl and mix with a teaspoon of salt and pepper.

2. In a cast iron pan over low direct heat melt the ghee and place the potato strands in a pan. Gently press into disc 2cm high but don’t over compress to allow maximum crispiness.

3. In a separate pan, warm through the mushy peas.

4. Grill the rösti until golden brown and flip using a plate to cook the other side through.

5. Move the rösti to indirect heat.

6. Thread a skewer through the monkfish tail and grill until cooked through (we always use a thermometer).

7. Top the rösti with mushy peas and grilled fish. Sprinkle with salt and pepper.
