A simple but tasty vegetarian offering for your summer entertaining.
Ingredients
1 large aubergine, sliced
1 shallot, finely diced
1 garlic clove, finely chopped
2 springs of fresh oregano
3 tbsp red wine vinegar
500g chopped tomatoes
½ mozzarella ball
100g grated parmesan
50g breadcrumbs

Method
1. Preheat your BBQ to 200°C.
2. Slice your aubergine and sprinkle with rapeseed oil.
3. Place on the grill and grill both sides to get some nice colour. Remove from the grill and place on a tray.
4. Preheat a skillet, add some oil and cook down the shallot and garlic. When soft, add the oregano.
5. Add the vinegar and deglaze the pan.
6. Add the chopped tomatoes and cook for 5 minutes. Season with salt and pepper and remove from the heat.
7. Use a clean skillet, place some tomato sauce in the bottom, add a layer of aubergine, then top with mozzarella, parmesan and basil, repeat the process three times.
8. Finish with tomato sauce and then sprinkle over the breadcrumbs and parmesan.
9. Place in the BBQ indirect and cook until the aubergines are soft and the top has a nice even colour.
