Texas Trash Pie

Hailing from Round Top, Texas this is a fantastically simple dish that can be switched up as you like and can utilise all four corners of your pantry but trust me with everything you throw in this, it is far from ‘trash’. If you do switch anything out remember to keep the cup measurements all the same. I find using a set of measuring cups invaluable for recipes like this. You can either make a simple pastry case or even freeze a pre made sweet pastry case in advance.
Ingredients
PASTRY CASE
225g plain flour
½ tsp salt
125g vegetable oil
60ml full fat milk
PIE FILLING
1 cup chocolate chips
1 cup pretzels, crushed
1 cup graham crackers (or digestive biscuits), crushed
1 cup shredded coconut
1 cup pecan pieces
1 cup fudge chunks
1 cup honeycomb pieces
113g unsalted butter, melted
1 (14oz.) can sweetened condensed milk
Method
PASTRY CASE
1. In a large bowl, mix the flour, salt, oil and milk together to form a rough dough.
2. Press dough mix into a 10 inch flan case or a similar size foil tray and bring up sides over the edge of the dish. Place in the freezer.
PIE FILLING
1. Preheat your grill for indirect cooking at 170°C.
2. Gently melt the butter and set aside to cool slightly.
3. Crush crackers/biscuits and pretzels in a Ziploc bag if not done already. Remember a cup of crushed ingredients will be more than uncrushed.
4. In a large bowl mix all the pie filling ingredients together until well combined. As a side note i make a little more filling as it is uber moreish and some may not make it all the way to the pie crust.
5. Press the mixed pie filling into the frozen pie crust.
6. Bake the pie on your grill or oven for 30-35mins or until the pie has set and has a lovely golden colour.
7. Allow pie to cool for 30-40mins (if you can resist).
8. This is amazing finished with some ice cream or whipped cream to pair with the salty sweet combination.
