Honey, Hiver Beer and Marmalade Glaze

This glaze is ideal for pouring over precooked and studded ham to create a wonderfully sticky, bitter-sweet and tangy glaze that will caramelise and crisp with a few darker edges.
Ingredients
100ml runny honey (nothing too posh)
200ml Hiver honey beer
100g orange marmalade (we used Wilkin & Sons Old Times)
Method
1. To make the glaze, pour the honey into a heavy-based saucepan and place over a medium heat. When the honey begins to turn slightly dark and you can smell a slight caramel flavour in the air, pour in the beer carefully, as the reaction between the honey and beer will cause it to boil rapidly and perhaps spit a little.
2. Once the liquid calms down, add in the marmalade and bring to a boil again.
3. Reduce the liquid by half and then remove from the heat.
