New York BBQ Baked Cheesecake

I’m bringing a bit of America here for this summer dessert – BBQ baked cheesecake! It’s got a buttery biscuit base and I’ve topped it with my favourite summer fruit mixed in with some of my homemade strawberry jam – the British strawberry season will be in full swing by now. The cheesecake may crack a little on the top as it cools after baking – that’s why I put all the fruit on the top – to hide the cracks! Raspberries or grilled peaches would be delicious on the top, too.

Ingredients

BASE

200g digestive biscuits
25g golden caster sugar
75g unsalted butter

FILLING

600g full fat soft cheese
200g golden caster sugar
200ml soured cream
Vanilla paste
3 large eggs
50g plain flour
Fresh strawberries, cut up if large
3 tbsp strawberry jam
I used a 20cm spring form baking tin lined with baking parchment for this cheesecake.

Set up your BBQ for indirect cooking at a temp of 170°C.

Method

1. Using a food processor, whizz up the digestive biscuits so you have small crumbs.

2. Melt the butter in a saucepan and stir into the crumbs along with the sugar. Mix well and pour into the lined baking tin. Press down with a back of a spoon. Place in the fridge while you make the filling.

3. Put the soft cheese into a large mixing bowl along with the sugar. Using an electric whisk, beat until smooth. Add in a squeeze of vanilla paste and the sour cream. Whisk again until blended. Break in the eggs one at a time and whisk till you have a smooth batter.

4. Sift over the flour and carefully fold in using a large metal spoon, squashing any lumps.

5. Pour into the baking tin and place it into your BBQ to cook. I put my baking tins onto an upturned baking tin to help prevent the base overcooking.

6. The cheesecake took 1 hour 15 minutes to cook. The top should turn a pale colour and the edges a little brown with a slight wobble in the middle. Check after an hour.

7. Remove from the BBQ and leave to cool. This is when you may get some cracks appear in the top, which is normal. Put it into the fridge to cool completely. Overnight is best but four hours will be sufficient.

8. Turn out the cheesecake onto a plate and top with fresh strawberries and jam. The cheesecake is delicious on its own or, if you’ve any sour cream left over, dollop on some of that or pour over some double cream.
