Curry Cauliflower Steaks

A fresh and colourful vegan BBQ dish fit for the autumnal season.

Ingredients

1 whole cauliflower
Olive oil

CURRY DRESSING
1 lemon – juice and rind, finely grated
1 garlic clove, minced
½ tbsp fresh ginger, finely grated
¼ cup tahini
1 tsp peanut butter
½ tsp turmeric powder
½ tsp cumin
½ tsp garam masala
1 tbsp honey or agave nectar
2 tbsp apple cider vinegar
Salt & pepper

Method

1. Slice the cauliflower into 3-4cm steaks.

2. Brush both sides of the cauliflower steaks with oil and season with salt and pepper.

3. Place on direct heat for a couple of minutes to lightly colour then move to indirect heat for 10 minutes, lid down. Turn, and cook for another 10 minutes. Steaks should be tender but hold shape.

4. Add all of the dressing ingredients into a bowl and mix until smooth; if too thick, add a dash of water to loosen.

5. To serve, pour dressing over cauliflower and add pomegranate, coriander/cilantro and toasted almonds.
