Strawberry & Black Pepper Upside-Down Cake

What says summer more than strawberries?  Aston Prideaux shares his upside down cake recipe for perfect summer dessert.

Ingredients

150g butter
150g golden caster
3 large eggs
1 tsp vanilla extract
150g self-raising flour
½ tsp baking powder
Pinch of salt
½ tsp black pepper
500g strawberries
50g caster sugar
30g cornflour
10-inch skillet pan

Method

1. Set up your grill for indirect cooking, running at around 180°C (I like to use a coal basket either side and place the food in the middle on a kettle BBQ).

2. Start off by slicing the strawberries add them to a bowl with 50g caster sugar and 30g cornflour and mix to coat then leave to one side.

3. Cream the butter and golden caster sugar until light and fluffy, beat in the eggs one at a time then add the vanilla extract.

4. Mix together the flour, baking powder, salt and pepper then add to the cake mixture and stir until fully combined.

5. Line the skillet with parchment and grease well.

6. Arrange the strawberries in the bottom of the skillet pouring any leftover juices over the top, crack some black pepper over the strawberries then spoon over the cake mixture.

7. Slide the skillet into the grill and bake indirect for around 25-30 minutes until a skewer comes out clean.

8. Let the cake cool for about 20 minutes before turning out onto a board or plate.
