Spiced Apple Muffins

A warming treat that’s quick to rustle up – no whisking for these tasty muffins and once you’ve grated and chopped the apples, weighed out all the ingredients, and cooked they will be straight out of the BBQ into your bellies! Children will love these too! Delicious eaten while still warm or served with custard for a warming pudding.
Ingredients
MAKES 12
3 eating apples – 2 peeled and grated, one peeled and chopped into small pieces
150g butter (melted)
2 large eggs (beaten)
200g soft light brown sugar
200g self raising flour
½ tsp of salt
2 tsp ground cinnamon
1 tsp baking powder
TOPPING
1½ tbsp demerara sugar
½ tsp cinnamon
Method
1. Set your BBQ for indirect cooking at a temperature of 180°C.
2. Melt the butter and put into a large bowl followed by the grated and chopped apple, sugar, beaten eggs and stir.
3. Sieve the flour, baking powder, cinnamon and salt into the mixture. Combine with a spoon and mix well but there’s no need to beat it. It should look quite sloppy!
4. Line your muffin tin with the paper cases and, using a tablespoon, carefully spoon the mixture into the cases. Sprinkle with the topping of demerara sugar and cinnamon. This will give a lovely crunch.
5. I place an upturned baking tin on the top of the grill to give a bit of height to prevent the base being overcooked. Bake for about 30-40 minutes until the tops of the muffins are golden. Insert the spike of your Thermapen (or skewer) into the muffins and if it comes out clean, they will be ready.
6. Place on a baking tray and, when cool enough, pop one straight into your mouth, or serve with custard.
