Octopus Burnt Ends

Ingredients

1 whole octopus (about 1.5–2kg, cleaned, frozen and defrosted)
1 onion, halved
2 bay leaves
4 cloves garlic, crushed
1 lemon, halved
1 tbsp black peppercorns
150ml Angus & Oink barbecue sauce
Lemon wedges, to serve

Method

1. Place the octopus in a large pot and cover with water. Add onion, bay leaves, garlic, lemon, peppercorns, and a big pinch of salt. Cook gently for approx 3 hours until the octopus is tender when pierced with a knife.

2. Remove and allow to cool completely, then cut into manageable tentacle portions. Chill until ready to grill.

3. Set up the grill for direct cooking at 200–220°C with grates for maximum char. Brush the tentacles lightly with olive oil.

4. Grill directly over the flames for 2–3 minutes per side until charred. Brush generously with Angus & Oink barbecue sauce and caramelise for another minute per side, creating a sticky glaze.

5. Transfer to a platter, sprinkle with sea salt, and finish with fresh lemon wedges. Serve hot off the grill with extra sauce on the side.
