Dirty Sri Lanka Rump Curry

Ingredients
800g rump steak
3 tbsp vegetable oil, plus more for steak
3 large onions, sliced
6 garlic cloves, peeled and chopped
4-6 green finger chillies split
Thumb-sized piece of fresh ginger, peeled and finely chopped
2 tbsp Angus & Oink Sri Lankan Curry Rub
400g can chopped tomatoes
20g sugar
1 tsp vinegar
50g butter, melted
30ml water
Method
1. Rub the steak with oil, then season generously with the Sri Lankan rub. Leave to marinate in the fridge for between 4 and 24 hours.
2. Sweat down onions for a few minutes and add chopped garlic, ginger and chillies. Add 1 tbsp of Sri Lankan rub and cook for a minute or two before adding the water to cook out the spices. Add tomatoes, sugar and vinegar. Simmer for 20 minutes. Adjust seasoning before blending with a stick blender and stir through the butter.
3. Load up the BBQ with the best quality charcoal until hot enough to sear. Place the steak directly over the coals. If it flames, smokes and sizzles, you’re doing it right! Turn every so often until the internal temperature reaches 58°C. Reheat the sauce, chop the steak into strips and stir through the sauce. Garnish with coriander and serve.
