Thai Pork Meatballs with Sweet & Spicy Dipping Sauce

Packed with lemongrass, lime leaves, chilli, and ginger, these fragrant pork meatballs are skewered and cooked low and slow before being finished directly over the coals and basted in a sticky tamarind and palm sugar glaze. A vibrant sweet, sour, and spicy dipping sauce — sharpened with lime and finished with fresh coriander — makes them utterly impossible to stop eating.
Ingredients
MEATBALLS
500g pork mince
2 tsp fish sauce
2 spring onion, finely chopped
½ red chillies, finely chopped
2 lime leaves, finely chopped
2 tsp coriander leaves, finely chopped
2 garlic cloves, minced
1 tsp ginger, minced
1 lemongrass stick, minced
1 tbsp palm sugar
SAUCE
2 tbsp soy sauce
1 tbsp fish sauce
1 tbsp tamarind paste
2 garlic cloves, finely diced
1 thumb ginger, finely diced
½ red chilli, sliced
2 spring onions, sliced
2 tbsp palm sugar
½ lime juice
100ml water
1 tbsp coriander leaves, chopped
Method
1. Thoroughly mix all the ingredients for the meatballs together then split into 16 and roll into golf ball size balls. Refrigerate for 30 minutes so the meatballs firm up.
2. In the meantime, set up your BBQ for 50/50 indirect and direct cooking.
3. Skewer the meatballs; using a double skewer helps stop them spinning.
4. Place them on the indirect side of the BBQ to start cooking.
5. Place all the sauce ingredients apart from the fresh coriander into a pan and place over the direct side to reduce the liquid by half.
6. When your meatballs are almost cooked swap over heat zones with the sauce so your meatballs are grilling directly over the fire.
7. Baste the meatballs with the sauce making sure you keep an eye on them so they don’t burn then remove from the heat.
8. Stir the coriander through the sauce and serve alongside as a dip.
