Greek Chicken Souvlaki

Thinking of summer holidays, sunshine and food… so I’ve taken you to Greece (virtually, of course) with this zesty chicken souvlaki, charred on the grill to get those gnarly bits, sliced and topped onto filled flatbreads of a gorgeous colourful Greek salad and drizzled with tzatziki. You could thread the meat onto skewers and grill over coals or use pork instead of chicken. These are super simple to prepare and cook and are so tasty. Ideal for those summer BBQs.
Ingredients
SERVES 6
5 chicken thighs (skinless and boneless)
2 tbsp olive oil
2 tbsp lemon juice
Half a lemon, sliced
Half an onion, thinly sliced
1 tsp oregano
1 tsp thyme
2 small sprigs rosemary, chopped
2 tsp honey
3 cloves garlic, sliced
Salt and pepper
5 tbsp natural yoghurt
Chunk of cucumber – halved, seeds removed and grated into a bowl. Squeeze out the water in your hands.
1 clove garlic, grated

250g strong white flour
3.5g dried yeast
1 tsp sugar
1 tsp salt
15ml olive oil
150ml warm water
Take a little gem lettuce, tomatoes, cucumber, red onion, red pepper, olives and avocado.
Chop and slice everything up so you’ve a variety of sized pieces and mix it all together in a lemon dressing.
Method
METHOD FOR CHICKEN AND MARINADE
1. Mix all the marinade ingredients together. Place the chicken thighs into a dish and pour over the marinade – lemon slices and onions too. Make sure all the chicken thighs are coated – give it a good mix with your fingers. Let it sit for a minimum of 30 minutes for some of the flavours to seep into the chicken.
2. Set up your grill for direct cooking.
3. Oil the grill and place the chicken thighs including the onion and lemon bits onto it.
4. Keep an eye on them. Turn over once they have coloured and caramelised a little and cook the other side. If you’ve any marinade leftover in the dish, brush this on during the cook.
5. Check the chicken is cooked through (75°C, use a Thermapen) before slicing the thighs. Serve with flatbreads, a Greek salad and tzatziki.
Double up so you’ll have leftovers and make up some flatbread wraps for lunches/picnics. Wrap in parchment paper, tie with string and cut through.
METHOD FOR TZATZIKI
1. Mix everything together and place into a bowl.
METHOD FOR FLATBREAD
1. Mix into a dough, knead for 5 minutes and leave to prove for an hour.
2. Divide the dough into 6 and roll out each piece into a round and separate with parchment paper.
3. Cook on the grills over direct heat, turning over when beginning to bubble and brown underneath.
4. Cook the other side and keep warm in a clean tea towel.
