Think crispy beef bacon! These are delicious and will disappear in seconds.
Ingredients
600g Korean-style beef short ribs (Swaledale Butchers)
Course sea salt
Hickory’s Pitmaster dry rub
Method
1. Set your BBQ to approximately 150°C. I added a handful of water-soaked oak wood chips from Anglesey Rum Co for the extra smoking aroma and flavour from the spiced rums.
2. Salt the ribs on both sides, then coat generously with a dry rub of your choice.
3. These ribs don’t take long as they are super thin. I cooked them for 20 minutes on each side, but adjust the time depending on the thickness. If they look to be drying out, spritz with some apple juice (or Anglesey Rum).
4. Serve immediately once cooked. I served these with the Charred Slaw recipe from our BBQ Mag recipe collection.
