Seared Scallops with Gremolata, Asparagus, Fennel and Apple

A seafood showstopper from Phil Yeomans for your spring entertaining.

Ingredients

6 fresh diver scallops
1 fennel bulb
1 bunch of asparagus
1 Granny Smith apple
1 red chilli
Sprigs of dill

GREMOLATA BUTTER

1 block (250g) butter softened
1 tbsp Maldon salt
2 tbsp chopped fine capers
Zest of 2 lemons
Juice of 1 lemon
25g chopped parsley
25g chopped coriander

Put everything into a bowl with the butter and mix, roll into a log in clingfilm, set in the fridge until needed.

Method

1. Preheat your BBQ to 250°C.

2. Place the fennel bulb direct in the coals and cook dirty until soft. Remove the outer burnt layers, chop the fennel down and season with salt. Place into a bowl.

3. Grill the asparagus until tender, remove from the grill and allow to cool.

4. Slice the asparagus into round discs.

5. Cut a Granny Smith apple into matchsticks, add the fennel and asparagus in a bowl, season with salt and pepper. Dress with lemon juice and olive oil. Chop some dill and fold through the salad.

6. Preheat the plancha plate and sear your scallop until crisp on one side, flip and finish for 30 seconds.

7. Place the salad mix in your scallop shell or small bowl and place the scallop on top.

8. Slice a piece of gremolata butter for each scallop and place on top of the scallop. Take an ember from the BBQ and place on the butter to melt over and glaze your scallop.

9. Remove the ember, garnish with fresh sliced red chilli and dill sprigs.
