Experience the joy of having ribs at home with Aston Prideaux’s simple, yet delicious, recipe.
Ingredients
St Louis ribs
2 tbsp Maldon salt
1 tbsp course ground pepper
1 tbsp ground allspice
WRAP
50g butter
Zest and juice of an orange
GLAZE
300g fresh or frozen cranberries
Zest and juice of 2 oranges
1 cinnamon stick
2 star anise
1 tsp mixed spice
100ml maple syrup
75g brown sugar
75ml whiskey (optional)
Method
1. Set up your BBQ for indirect cooking aiming for around 140°C.
2. Remove the membrane from the back of the ribs then dust over with the salt, pepper and allspice rub.
3. Place the ribs on the grill for the first 3 hours.
4. Remove the ribs, wrap them in foil with the butter and orange zest and juice and return to the grill for a further 2 hours.
5. To make the glaze, add everything except the whiskey to a pan simmer for 5-10 minutes until the cranberries have fully collapsed. Add the whiskey and heat for another minute. Set aside until needed.
6. Peel back the foil making a boat to keep the juices and catch any glaze.
7. Brush with the glaze every 15 minutes for the next hour.
