Roasted Vegetable and Pesto Tartlet with Goat’s Cheese

As the crisp autumn air sets in, there is nothing quite like saying goodbye to the summer with the comforting flavours of a BBQ tartlet to warm your soul. This delightful recipe combines the smoky richness of barbecue with the subtle flavours of sweet roasted vegetables, creating a perfect harmony of taste and texture. Whether you are hosting a cosy gathering or simply enjoying a quiet evening at home, these tartlets are sure to impress with their savoury filling and flaky crust.

This recipe is very versatile, and you can use whatever veg you have handy. As we are heading into the autumn months, try swapping out one of the vegetables for a butternut squash or try a red pepper pesto, feel free to experiment.

Ingredients

1 pack of ready-rolled puff pastry
1 red onion
1 courgette
1 red pepper
1 yellow pepper
50g of sun-dried or sun-blushed tomatoes
1 small jar of ready-made green pesto
100g of goat’s cheese cut into 1cm slices (or feta or mozzarella)
Small beaten egg to glaze

Method

1. Preheat your grill to about 180°C

2. Roughly chop the peppers, onion, and courgette. Scatter on a baking tray, drizzle with olive oil and grill until slightly charred and tender.

3. Set to one side to cool slightly while you prepare your base, you can leave the grill set at 180°C, it will only take you 15 minutes to prepare the rest.

4. Unroll the pastry and, with it in landscape. cut in half from top to bottom. Score a border about 2cm in from the edge of each piece, taking care not to cut right through the pastry. Lift on to a baking sheet or baking tray, take the pesto and spoon into the middle rectangle, spreading around evenly. Scatter the roasted veg on top of the pesto followed by the sundried tomatoes.

5. Add the slices of cheese.

6. Brush the border of the pastry with the beaten egg and place back on the grill for 15-20 mins until the pastry is golden.
