As the winter sets in, why not fire up the coals or plancha on a weekend morning and treat yourself and the family to a super-easy homemade sausage pattie, egg, and melted cheese piled high in a warm English muffin.
Ingredients
500g pork mince, 20% fat
1 tsp fine sea salt
1 tsp garlic granules
1 tsp onion granules
1 tsp mixed herbs
1 tsp sage
1 tsp rosemary
½ tsp black pepper
¼ tsp mustard powder
4 English muffins

Method
1. Combine everything in a bowl, get those hands in and mix well. It can be made the day before and kept in the fridge.
2. When ready to cook, divide into 125g balls and make into patties; we used a press but shaped by hand is fine.
3. Cook on a hot plate over coals or plancha until they reach an internal temperature of 75°C.
4. When nearly done, cook the eggs; we used egg rings for ease, available in some supermarkets and online. Top with cheese and place in a toasted muffin.
