Ultimate PIB Spirals

Phil Robert shows us how to make a showstopping pig in a blanket using sausage swirls.

Ingredients

2 large, high-quality sausage swirls (best to ask your butcher)
12 slices of parma ham
Angus & Oink cherry crush seasoning – or your favourite BBQ rub
4 wooden skewers

Method

1. Slightly separate the sausage swirls but don’t unravel them.

2. Remove the parma ham from their plastic sleeves, or slice it fresh.

3. Spread out the slices and carefully wrap them around the sausage, being careful not to overlap the pieces to gain maximum crispiness when cooked.

4. Repeat on the second whirl and press firmly around the sausage so there are no loose straggly bits.

5. Skewer the sausages, two per swirl as shown in the picture and season liberally on both sides.

6. Set up your BBQ for indirect cooking at around 150/160°C and place the sausages on the grill away from the fire. Cook until the internal temperature of the sausages reach 63°C then place them over direct heat for around a minute on each side.

7. The parma ham will crisp up incredibly quickly as it’s so thin, so be careful.

8. Remove from the heat and set aside to rest for a few minutes or so.

9. Slide out the skewers and serve!
