Smoked Pork & Fennel Casserole

Ingredients

800g pork shoulder
Fennel seeds
Chilli flakes
2 onions, diced
2 celery stalks, diced
2 cloves garlic, finely chopped
1 large bulb fennel, sliced
400g jar of butter beans
300ml cider
500ml stock
1-2 tbsp mustard
1 tbsp finely chopped sage
2 tablespoons cornflour
Handful cavolo nero sliced

Method

1. Dice the pork shoulder into 3cm cubes, sprinkle with salt, chilli flakes and fennel seeds.

2. Set up the grill for smoking. I put the coals in the middle with a couple of lumps of wood then put the chunks of pork around the outside so they are all equal distance from the heat.

3. When the pork gets to 60°C internal, heat the casserole dish, sauté the onion, celery and fennel then add the garlic, cider, stock, mustard and sage.

4. Place the pork into the casserole to begin braising. After an hour, add the butter beans and the cornflour mixed with a couple of tablespoons of water.

5. Continue cooking until the pork is tender, making sure to stir every now and then.

6. When the pork is done add the cavolo nero and cook for another 5 minutes until wilted, finish with freshly cracked black pepper and serve with crusty bread.
