A simple dish to impress family or guests. The punchy marinade complements the richness of the beef and brings out the umami flavours. Served best with a fresh chimichurri sauce and salads. Ask your butcher to trim the sinew off for you or do this before marinating.
Ingredients
SERVES 4
600-800g/1lb 5oz-1lb 12oz fillet of beef (from our Sussex local – A. Twine Butchers)
8 tbsp Worcestershire sauce
2 tbsp Dijon mustard
1 tbsp Vegemite/Marmite
2 tbsp olive oil
Butter knobs
Black pepper
Method
1. Mix Worcestershire sauce, mustard, vegemite, pepper and olive oil in a large bag/bowl. Add the beef and massage the mixture gently into the meat.
2. Seal or cover and leave to marinate in the fridge for a minimum of 1.5 hours, overnight ideally.
3. Remove from fridge 1-2 hours before cooking to get up to room temperature.
4. Pat dry with paper towel to remove excess marinade and then drizzle with a bit more olive oil.
5. Place on direct heat for 8-10 minutes, turning every 1-2 minutes and adding knobs of butter as you turn.
6. After 8-10 minutes move to indirect heat for 20-25 minutes until the internal temperature is 57°C/135°F (medium rare) then leave to rest for 20 minutes.
7. Serve with fresh chimichurri sauce (recipe ideas on p65 and p70) and salads.
