Prawn Nasi Goreng

Sizzling wok-fried prawns, garlic, and chilli tossed with rice and sweet kecap manis for a smoky, high-heat take on nasi goreng. Topped with a fried egg and fresh garnishes, it’s a quick, punchy one-wok meal.

Ingredients

150g prawns
2 tbsp oil
2 garlic cloves, minced
1 tsp red chilli, finely chopped
1 onion, finely chopped
500g cooked white rice
2 tbsp kecap manis
2 tsp shrimp paste

Fried eggs
Fresh coriander
Chilli oil
Tomatoes
Lime wedges
Crispy shallots

Method

1. Set up your grill for direct cooking at 250°C and place a wok over the heat.

2. Add the oil to the wok and heat until shimmering. Stir in the prawns, onion, garlic and red chilli, cooking for around 2 minutes while stirring regularly until the prawns are just cooked through.

3. Add the kecap manis and shrimp paste, stirring well to coat everything evenly. Cook for a further 2 minutes.

4. Tip in the cooked rice and stir-fry for around 5 minutes until the rice is piping hot and evenly coated in the sauce.

5. Remove the nasi goreng from the wok and set aside briefly. In the same wok, fry the eggs to your preferred doneness.

6. Serve immediately topped with fried eggs and garnishes such as fresh coriander, chilli oil, sliced tomatoes, lime wedges and crispy shallots.
