Ingredients
2-3 tbsp Dijon mustard
6 croissants, split in half
8 slices thick-cut gammon
250g Gruyère, grated
3 eggs
350ml whole milk
100ml single cream

Method
1. Set your BBQ to a medium heat, approximately 180°C. Spread mustard over each croissant half, then fill each croissant into a sandwich using the gammon and Gruyère.
2. In a saucepan, whisk together the eggs, milk and cream, then season generously. Butter an ovenproof dish and arrange the croissants at the bottom. Pour over the creamy mixture and leave to soak up for 20 minutes.
3. BBQ with indirect heat until the egg mixture is just set – it should take approximately 15 minutes. Dive in!
