Sticky Asian Smoked Pigs’ Cheeks

Ingredients

CHEEK DRESSING

1 cup sweet chilli sauce
1 cup honey
1 cup soy sauce
1 cup lime juice
Splash of fish sauce
1 tbsp tamarind
Mix well together in a bowl with a whisk.

SAUCE

10 pigs’ cheeks
1 butternut squash, peeled and cut into half moons
3 small red onions, halved
3 heads of pak choi
2 pink lady apples
15ml sherry vinegar
Crispy onions

Method

1. Remove any sinew from the pigs’ cheeks.

2. Season with your choice of BBQ rub , I used a Korean spiced rub, apply to both sides of the cheeks.

3. Heat your grill to 130°C, add a chunk of applewood to the coals and place the cheeks as well as the apples on the grill, and smoke the cheeks indirect for 2 hours.

4. After 1 hour, remove the apples from the BBQ. Remove the core and place in a blender, puree till smooth and pass through a sieve. Finish with a splash of sherry vinegar to taste.

5. After 2 hours, add the cheeks to a foil tray and cover with the dressing. Keep some dressing to finish the dish later.

6.Cover your tray with foil and cook for a further 2 hours, once the cheeks are soft to touch and reached above 96°C remove from the grill and rest for 20 minutes.

7. Take your BBQ up to 200°C with direct heat, grill the butternut squash and the onion. Once cooked, remove from the grill and season. Lightly dress your pak choi with rapeseed oil and grill.

8. Open the cheeks and spoon over the dressing to glaze.

9. Place a good amount of apple puree on your board or plate, garnish with butternut, onion and pak choi. Top the garnish with the glazed pig cheek, drizzle some of the remaining dressing over your finished dish.

10. Top with a sprinkle of crispy onions.
