Marmalade Hot Cross Bread & Butter Pudding

A spin on a British classic and a good way to use up hot cross buns that are nearing best-by date, or like I did, bake your hot cross buns on the BBQ too (I used Phil Yeomans’ recipe, link below). You could also add chocolate chips or mini chocolate eggs for extra indulgence.

Ingredients

6 hot cross buns 
25g butter
4 tbsp marmalade (and another tbsp for glazing at the end)
2 large eggs
250ml milk
1 tbsp caster sugar

Method

1. Set BBQ up for indirect cooking at 170°C.

2. Slice the hot cross buns in half. Butter the top sides and spread marmalade on bottom sides. Sandwich back together and place into a baking dish.

3. Beat egg, milk and sugar together in a jug and pour over the buns.

4. Place in BBQ on indirect heat and cook for 25–30 minutes or until just set.

5. Remove from the BBQ and brush with additional marmalade to create a glaze.

6. Serve immediately as they are or with a dollop of ice cream on the side.
