Manteca

Manteca, based in Shoreditch, East London and co-founded by Chris Leach and David Carter, is a restaurant built around hand-rolled pasta, whole-animal butchery and open-fire cooking. The menu draws on Italian technique while celebrating British produce, with house-made salumi, nose-to-tail dishes and pastas at its core.
