Nduja smashburger

I'm a bit of a burger nerd, and anything more than a simple perfect cheeseburger needs to really work its way hard into my affections. This is one of the few that has made it, adding to my obsession for nduja. You can of course top any cheeseburger with nduja and it will melt on top as you eat the burger, but this technique gives the melting of the nduja a head start, and that's a good thing... 

Ingredients

FOR EACH BURGER

1 brioche bun

2x 3oz quality burger mince (ideally 20% fat twice ground through medium plate)

2 x plastic cheese slices

2 tsp nduja

a couple of slices bread and butter pickles

salt and pepper



Method

Get a hot plate/plancha screaming hot, place your two mince balls on to it, and use something to smash the burger (press or heavy pan) out flat and thin. Flip the burger after a couple of minutes, then top with a slice of cheese and a teaspoon of nduja; do this for both pattys. Using a cloche (upturned bowl) and a teaspoon of water under the cloche, steam the burger for a minute to melt the cheese and nduja a little. Load the toasted bun with both pattys, and top with a couple of pickle slices.
