Ingredients

4x250g dough balls (Ooni’s Sourdough Doughballs can be purchased via its website)

FOR THE TOPPINGS

100g pine nuts

1 serrano pepper, sliced

4 cloves garlic, sliced

100g pickled red onions

Flat Italian parsley leaves, to garnish

FOR THE POTATOES

1 large sweet potato

2 tsp extra-virgin olive oil

1 tsp fine sea salt

FOR THE SAUCE

320g crushed tomatoes

2 tsp fine sea salt

3 tsp harissa powder

Method

1. Make sure to prepare your dough ahead of time to ensure it rises at room temperature before firing up your oven.

2. Preheat your home oven/BBQ to 175°C. Place the pine nuts on a small baking sheet and bake for about 5 minutes, until the nuts are fragrant and golden. Remove from the oven and let cool, then roughly chop.

3. Increase the temperature of your home oven/BBQ to 220°C. Rub the sweet potato with olive oil and salt and roast until completely soft, about 45 minutes. Let

cool, then peel and crumble the potato into small chunks.

4. To make the sauce, add the tomatoes, salt and harissa powder to a bowl and mix until well combined. Adjust seasoning to taste, adding more harissa if you want extra heat.

5. Preheat your Ooni pizza oven to 485°C. Place a dough ball on your lightly floured work surface and push the air from the centre out toward the edge using your fingers. Stretch the dough out into a 12-inch round base, then lay the stretched dough over your lightly floured pizza peel or countertop.

6. Spread 80g of sauce on to the base of the pizza, then top with sliced serrano pepper, garlic, and sweet potato chunks.

7. Launch the pizza in the oven and cook for 60 to 90 seconds, turning to ensure an even bake. Remove from the oven and place on a cutting board.

8. Garnish with pickled red onions, toasted pine nuts, and parsley. Slice and enjoy.
