Mark Waters Spring 2023
It's time to celebrate the fantastic produce from our British farmers during British Beef Week. Beef is a staple ingredient for any barbecue, and with so many different cuts to choose from, the possibilities for delicious and flavourful dishes are endless. Here are 7 top recipes featuring different beef joints for your next barbecue.
First up, we have a classic Mexican-inspired dish, Steak Fajitas. The key to perfect fajitas is to get that delicious charred flavour on the beef while keeping it juicy and tender. Grilling the steak over high heat and slicing it thinly against the grain will give you that perfect texture and flavour that everyone will love.
If you're looking for a show-stopping dish, the Reverse-seared tomahawk steaks are a must-try. The long bone left on the ribeye resembles a tomahawk, and it makes for a great centrepiece on the barbecue. The reverse-searing method, where you cook the steak low and slow first, then finish it off on high heat, ensures a beautifully charred exterior and a perfectly cooked, juicy centre.
For something a little bit different, the Thors hammer recipe uses beef shank that is smoked for hours to create a unique smoky flavour. The low and slow cooking process tenderises the meat, making it fall off the bone and melt in your mouth. The result is a delicious, flavourful meat that is perfect for sandwiches, tacos or on its own.
The Nduja smashburger is a burger lover's dream. Nduja is a spicy spreadable salami that adds a kick of flavour to the beef patty. The key to making the perfect smashburger is to cook it on a hot griddle, pressing it down to get that crispy, caramelised crust on the outside while keeping it juicy and tender on the inside.
Surf N Turf is a classic combination that never goes out of style. Using the high-end features of a gourmet barbecue, you can easily cook the perfect steak on the Steak Shelf and even scallops are wonderfully cooked using the Gastro system griddle. This dish is sure to impress your guests and elevate your barbecue game.
For those who love a smoky and tender beef rib, the Tender and flavorful woodfire smoked beef short ribs recipe is perfect. Check out Lee’s recipe at Smoke and Sear.
Last but not least, the Beef Picanha skewers are a simple yet flavourful recipe that is perfect for a summer barbecue. Pichana is a cut of beef from the rump that is juicy and tender. The skewers are seasoned with a mixture of garlic, paprika and cumin, then grilled to perfection.
