Sweet potato surprise

The surprise comes when you cut these open to reveal an ooey gooey melty marshmallow inside, so bad but yet so good!

 

Ingredients

 

Sweet potato surprise

  • 2 large sweet potatoes
  • 50ml maple syrup
  • 50g butter
  • 50g brown sugar
  • 200g crunchy nut cornflakes (crushed)
  • 4 jumbo marshmallows

 

Method

 

  1. Bake the sweet potatoes until soft. This can be done in a smoker, oven or microwave.
  2. Allow to cool a little then peel the skins off and place the flesh in a bowl with the maple syrup, butter and sugar. Mash everything together and leave to cool in the fridge.
  3. When cold, take a large marshmallow and form a quarter of the sweet potato mix around it into a ball.  Do the same with the other 3 marshmallows.
  4. Roll the balls in crushed crunchy nut cornflakes and press into the sweet potato to form a good crust.
  5. Bake the balls on a tray in the BBQ or in a pre-heated oven set to 150°C for around 30-40 minutes.
  6. Serve hot, drizzled with more maple syrup if you wish.
