Grilled avocados with mezcal and lime dressing

Avocados trees grow all over California and their fruits are a big part of everyday meals. Grilling them deepens the flavor, while dousing them in a perfumed mezcal and lime dressing is divine.

Avocados trees grow all over California and their fruits are a big part of everyday meals. Grilling them deepens the flavor, while dousing them in a perfumed mezcal and lime dressing is divine. Next time you make guacamole, try charring the avocados on the grill before mashing them.

Serves 6

 

Ingredients

 

Grilled avocados with mezcal and lime dressing

  • 4 avocados
  • 60ml orange blossom honey
  • 60ml extra virgin olive oil
  • 60ml mezcal
  • Zest and freshly squeezed juice of 2 large limes
  • Sea salt and cracked black pepper
  • Oil, for brushing the grate

 

Method

 

  • Halve the avocados and remove the stones. Leave the skin on.
  • In a small bowl, whisk together the honey, oil, mezcal, and lime zest and juice. Season with salt and pepper and set aside.
  • Heat the barbecue to medium–high. Brush the grate with oil.
  • Place the avocados cut-side down on the grill and cook for about 3–4 minutes until slightly charred and browned. Turn them over and cook for another 2 minutes.
  • Remove from the grill and place on a platter, drizzle with the mezcal and lime dressing,
