Coronation Lamb Burgers

Light up the barbecue to celebrate the royal Coronation with friends and family. We love these lamb burgers with a regal twist - made all the better for being cooked on Masterbuilt’s charcoal grill.



 

Ingredients

 

Coronation Lamb Burgers

4 Brioche buns, halved

500g Lamb mince

1 tbsp Medium curry paste

Pickled sliced red onion

Half a cucumber, thinly sliced

1 tsp Sea salt

1 tsp Black onion seeds

Fresh aromatic leaves - mint, watercress and coriander works well


For the coronation mayo

3 tbsp Mayonnaise

2 tsp Curry powder

1 tsp Plain yoghurt

2 tsp Mango chutney

 

Method

 

Start with salting the cucumber. Place the sliced cucumber in a bowl, sprinkle with sea salt and onion seeds and chill for approximately one hour.

In the meantime, combine the lamb mince, curry paste and a teaspoon of salt and roll into four equal patties.

When you’re ready to go, lightly toast your buns on a medium-high grill and set aside.

Next, grill the burgers and flip after a couple of minutes until they develop a delicious crust on both sides and reach a core temperature of 70c minimum.    

Remove the cucumber from the fridge and drain the excess liquid.

To build your burger, spoon the mayo on one side of a bun, then add the leaves. Top with a burger, then add cucumber, pickled red onion and a further spoonful of the coronation mayo. Enjoy!
